{For the Love of Quinoa-Day FOUR} Quinoa Fried Rice

MMMmmmm....who doesn't like fried rice?

Fried Quinoa?!? Even better!

My kids just loved this and that is totally awesome in my book because it is just PACKED with veggies. Thankfully they eat most veggies anyways, but I think even for those that don't this will be a hit.

Doesn't it look pretty?!? I just love seeing all those colors in there <3


Quinoa Fried Rice

2 T. Coconut Oil, divided
2 Large Eggs, beaten
2 Garlic Cloves, minced
1 Small Onion, diced
8 oz. Mushrooms, diced
1 head Broccoli, cut into florets
1 Zucchini, chopped
1/2 c. Frozen Corn
1/2 c. Frozen Peas
1/2 c. Shredded Carrots
3 c. Cooked Quinoa
1 T. Fresh Ginger, grated
4 T. Low Sodium Soy Sauce

Optional: Sriracha Sauce

Heat 1 T. Coconut Oil in Wok or large skillet


Add garlic and onion and cook until translucent, 3-5 min.


Add mushrooms, zucchini, and broccoli, cooking just until tender, 5-7 min.


While your veggies are cooking, cook eggs on med-low in a small skillet, flipping only once. Cut into small pieces and set aside for later

 Add carrots, peas, corn and quinoa, cooking just until heated. Add soy sauce, mixing well


Add in your diced eggs and stir. Serve immediately!

{For the Love of Quinoa-Day THREE} Quinoa Pancakes

Quinoa for breakfast...WHAAAAAAAT???

Heck yeah...why not?!? I have a really awesome recipe for pancakes, so I just added some cooked Quinoa to it...BAM...high protein, high fiber whole wheat pancakes.

Now, we do not typically eat pancakes very often, but every now and then we indulge ;) AAAAND they were so good!


Quinoa Pancakes

1 c. Cooked Quinoa
1 c. Whole Wheat Flour
3 t. Baking Powder
1/2 t. Salt
1 t. Vanilla
2 T. Maple Syrup, Grade B
1 Egg
1 c. Milk
1 t. Cinnamon 

Yields 10-12 pancakes


Add all ingredients together in a medium mixing bowl

Mix well


Spoon mix onto a hot griddle to desired size

 

Flip when you see bubbles form

Yummy...don't those look delicious?!?

Dig in and enjoy with some real maple syrup...I like to slice bananas on top of mine :)

{For the Love of QUIONA-Day Two} Quinoa Stuffed Bell Peppers

I know it is only day two of sharing the Quinoa love, but I am getting even more excited as I am prepping for the rest of the week!

We LOVE some bell peppers around here, the red especially, so I am always looking for new ways to use them in our meals. My 2 year old would eat them like apples if I let him!

We have done a variety of different "stuffed" peppers since eating cleaner, one of my favorites being the Philly Cheese Steak....aaaand since we LOVE Quinoa this week, we had to make a little somethin' somethin'.....


4 Bell Peppers, cut in half
3 c. cooked Quinoa
1 c. Black Beans
1 c. Frozen Corn
1/2 c. Diced Tomatoes with Green Chiles
1/2 c. Pepper Jack Cheese, shredded
1/4 c. Feta Cheese, crumbled
1/2 t. Chili Powder
1 t. Cumin
1 t. Garlic Powder
1/2 t. Onion Powder
1 t. Salt, or to taste

1/4 c. Pepper Jack Cheese, shredded


Mix all ingredients together


 Place peppers on a lined pan. 
Fill pepper halves and sprinkle with 1/4 c. pepper jack cheese. 
Bake at 350 degrees for 40 minutes.
Enjoy!

They really taste AMAZING! The filling would be great as a side as well....I could eat it for every meal I think ;)

{For the Love of QUIONA-Day One} Quiona Date Bars

 As I touched on in my last post, Quinoa has some AMAZING benefits. 

I have come to have a new found {LOVE} for Quinoa lately, so I decided to dub this week {For the Love of Quinoa}!!!

So begins {Day ONE}.....


Quiona Date Bars

1 c. Medjool Dates (approximately 12-15)
1/2 c. Slivered Almonds
1/2 c. Cacao Chips (60% or higher) or Nibs
1/4 c. Shredded Coconut, unsweetened 
1/4 c. PB2 (optional)
1/3 c. Red Quinoa

1 T. water


Remove all the pits from your dates


Combine all your ingredients EXCEPT water into your food processor


and because EVERYTHING is better with Quinoa, I added some of that ;)


Process until you get a crumb-like consistency



Add 1 T. water and blend until a ball of dough forms


Turn out onto a piece of parchment paper


Roughly form into a square-ish shape


Using another piece of parchment paper, place over the top and roll out to desired thickness (I prefer 3/4")


Refridgerate for about 30 minutes and cut into desired size


I left mine on the parchment and store in an airtight container in the fridge!!!! 

So...not only does Quinoa have great health benefits, but dates do also. These bars are just CRAM PACKED with energy to help you through the day.

Quinoa Crunchies

In making the change to a healthier lifestyle, we have drastically cut back on a lot of the foods that we were eating. One of them being carbs. As much as I like a good ole' buttered roll...yum...my body does not...boo. While we lowered our carb intake, we also looked for healthier substitutes to use in our meals that would normally contain pasta, rice, etc. What did we find...

QUINOA!!!!!

Did you know that Quinoa has great health benefits?

1. High in Dietary Fiber aids in digestion
2. Low in Fat made up of Omega 3 fatty acids
3. Gluten Free
4. High in Riboflavin or Vit B
5. Complex Carb digests slowly to keep you satisfied longer and blood sugar levels down
6. Full of Magnesium vital to Cardiovascular health
7. Protein Rich containing all 9 amino acids
8. FULL OF VITAMINS AND MINERALS!!!

My kids really love Quinoa and have grown up eating it so they don't miss the carbs. We all love it so much that I have been looking for new ways to incorporate it into our diet.

Recently I ran across some Quinoa snacks at the market....score! They were delicious, but the cost was a bit much for me...so what do I do? Make my own of course. I love them so much, I had to share the wealth....you don't know what your missing!


Quinoa Crunchies:

1/4 c. Oat Flour*
1/2 c. Quinoa**
1/2 c. Red Quinoa**
1/2 c. Sunflower Seeds
1/2 c. Brown Rice Syrup
1 tsp. Vanilla
2 tsp. Cinnamon
1/2 c. Dried Cranberries (chopped)
8 drops Orange Essential Oil (therapeutic grade)

*or 1/2 c. rolled oats processed in a blender or food processor until fine
**or desired color/combination- 1 c. total



Rinse Quinoa thoroughly and let the water drain off



Add all dry ingredients together and mix well



Roughly chop cranberries and add to dry ingredients, stirring well



Add brown rice syrup to the bowl and incorporate into the mixture making sure there are not any "dry" spots


Add your orange essential oil, stirring to combine


Layer a cookie sheet with parchment paper and spread evenly over the sheet
*hint: I used a second sheet of parchment over the top to spread out because the mixture is VERY sticky
Bake at 250 degrees for 1 hour

 
Remove from the oven and let cool on a wire rack
Cut or break into desired pieces

These make a great healthy snack alternative to a granola bar or even cookies....they also go great with your morning cup of coffee!
