Heck yeah...why not?!? I have a really awesome recipe for pancakes, so I just added some cooked Quinoa to it...BAM...high protein, high fiber whole wheat pancakes.
Now, we do not typically eat pancakes very often, but every now and then we indulge ;) AAAAND they were so good!
1 c. Cooked Quinoa
1 c. Whole Wheat Flour
3 t. Baking Powder
1/2 t. Salt
1 t. Vanilla
2 T. Maple Syrup, Grade B
1 c. Milk
1 t. Cinnamon
Yields 10-12 pancakes
Add all ingredients together in a medium mixing bowl
Spoon mix onto a hot griddle to desired size
Flip when you see bubbles form
Yummy...don't those look delicious?!?
Dig in and enjoy with some real maple syrup...I like to slice bananas on top of mine :)
