{Chicken Nuggets and Honey Mustard} THM S Meal


Nothing beats comfort food, but when you are trying to eat right, sometimes it can be hard. I came across a really awesome oven fried chicken recipe a while back ( I need to do some searching for the original) that sounded amazing, but of course contained flour...a no-no on THM. I simply switched out the white flour for almond flour and viola, some seriously amazing chicken!!!

When I first started using this recipe, I would use chicken breasts, but I soon realized that you get a much better flavor when you cut the breast into nuggets. *Tip: If the chicken breasts that you are using are much larger on one side, beat it out so that the breast is at an even thickness.

Preheat oven to 350°. Grab a large bowl...the largest one you have. I have a large bowl that I purchased at Costco that I use for preparing these. Mix all your spices as well as the almond flour into your bowl and whisk together. The almond flour that I use can get a bit clumpy, so using the whisk will break that up. Cut your chicken breasts into nugget size pieces and toss into the bowl. This is where the large bowl comes in handy, to roll around the chicken and coat it well. Spread onto a cookies sheet lined with parchment paper and bake for 12-15 minutes. Halfway through, I normally flip them...actually I just shake the pan a little, but that is optional. They will be a bit more crispy if you don't turn them.













Chicken Nuggets w/ Honey Mustard
{THM S Meal}


1/2 c. almond flour
2 tsp. salt
1/2 tsp. black pepper
2 tsp. poultry seasoning
2 tsp. paprika
1 tsp. curry powder
2 lbs. chicken breasts

Preheat oven to 350°. In a large bowl, combine all your ingredients together and whisk well, breaking up clumps. Cut your chicken breasts into nugget size pieces and toss into the bowl. Coat chicken well. Spread onto a cookies sheet lined with parchment paper and bake for 12-15 minutes. Optional: For a less crisp nugget, flip halfway through.

For the honey mustard:

2 tbsp. Dukes mayo
1 tsp. yellow mustard
2 tsp. whole grain mustard
1/2 packet Pure Via Stevia
1/2 tsp. paprika

Mix all ingredients together and enjoy!!!!
